chocolaterie: vanilla + smoke


This is the beginning of a little series: chocolaterie. Every once in awhile, I come across a very special nibble of chocolate that I think is worth mentioning, and this will serve as a little spot to share it with you.

In this exquisite bar from Brooklyn's own Mast Brothers Chocolate, cacao beans from Papua New Guinea are delicately smoked and slowly ground together with bourbon vanilla beans. The resulting mixture develops complexity over time, resulting in a most subtle and unusual bar of chocolate.

Their chocolates are sourced with great care, and their bars are meticulously crafted with a notably short list of ingredients. Analog beauty, indeed!
